Meat and veggies for brekkers, a nice roast beef dinner with the kids and home made fish and chips for tea.

I had the last helping of last weeks cooking for breakfast , a packet of crisps for dinner and a smoked Mackerel Fillet on oatcakes for tea.....

Chicken and veggies X three and I cooked savoury cabbage and onion as an extender. Yes, I do like my extenders!

Chicken and veggies X three again. I slow cooked my pork belly and orange and by teatime it was finished, defatted and in the fridge.

The pork belly has entered the mix so meat and veggies X three. Pork, orange and onions go so well together. I recommend you try it!
(Pork belly must be about the cheapest meat you can get.)

I'm settled into this week's batch of veggies and enjoying it. My eyes let me down yesterday and by mistake I bought some reduced price smoked Norwegian salmon fillets. That will be interesting, I always avoid farmed salmon.....

Meat and veggies X three but in addition I allowed myself a mid morning treat.... I defrosted one of the packs of salmon and had the two fillets as a snack. They were very nice but I shan't be changing my buying habits. I know too much about the problems with farmed salmon.....

Adding leafy greens never fails to improve nutritional qualities!
I had hot meat and veggies X three... I never cease to marvel about how every week's cooking batch tastes different and how they all improve as they sit in the fridge.

Pork shoulder steaks, cheesy mash and green beans. I made a big mistake and read the cooking instructions, season and dry fry were the essential instructions. Well that's another frying pan b*ggered. I keep forgetting that my gas hob is far hotter than all previous electric ones. I haven't cooked on gas since 1976.

I gave up on fancy frying pans years ago Julie and started using a cast iron one. It's non stick now because of the years of seasoning and never washing it in anything but plain water.... I gave my expensive copper bottomed one to my grand daughter Jess.....

Yesterday I had meat and veggies for breakfast and tea but had a very expensive dinner.... I defrosted two hot smoked salmon fillets and had them with boiled eggs on oatcakes for dinner. If you remember my eyes betrayed me and I bought them thinking they were mackerel fillets! Even at the reduced price they were £3.74.

In a bid to at least make an economy of use, we had potato wedges for dinner - obviously cooked in the oven together with lamb kebabs - also cooked in the oven. I do like to make sure that I get the best from the equipment even if it isn't necessarily the most economical meal. The most wasteful thing was the plastic bag that I put the potatoes in with oil and seasoning to ensure they were coated well.

I postponed veggie cooking unyil today but cooked the outer leaves off my cauliflowers and was surprised by how good they were.

Belly pork last night with a mixture of the usual vegetables and roast potatoes. As I am dieting, I could only look at and sniff the roast potatoes but they seemed fine. Not enough fat from the belly pork to cook them in so lard came to the rescue, I'm not a lover of cooking oil for roasties.

Chicken and veggies X three. I am quite enjoying using Wendy's cast iron pan for warming my meals. With a bit of forethought it's just as convenient and the thick cast iron guarantees a very thorough warming on a low heat. I am still dishing up into the Sistema pots in the morning as that is a handy way of controlling portion size....
